KOREAN BEEF BOWLS

1 teaspoon avocado oil

2 lbs extra lean ground beef

Salt + pepper

1 cup rice

2 cups chicken stock

SAUCE

6 garlic cloves

1 - 4 inch knob fresh ginger

1/3 cup soy sauce

1/3 cup rice vinegar

1/4 cup gochujang sauce

2 tablespoons sesame oil

2 tablespoons corn starch

SALAD

4 mini cucumbers

1 tablespoon rice vinegar

1 teaspoon red pepper flakes

Salt + pepper

TOPPINGS

Pickled onions

Green onions

Sesame seeds

Preheat a large skillet to screaming hot. Put on your rice - 1 cup of rice to 2 cups of chicken stock. Add avocado oil to pan and then ground beef. Break it up with a large spoon and let it sit to brown and crisp. Meanwhile put the sauce together by grating garlic and ginger into a small bowl then add the rest of the ingredients and stir to combine. Once beef is crisped on one side, flip over to the other side to crisp. Once it is crispy on all sides, add sauce and stir to thicken. Cut cucumbers into thin slices and toss with rice vinegar, red pepper flakes, salt and pepper. Place rice, saucy beef and cucumber salad in a bowl the top with pickled onions, green onions and sesame seeds.
