Chicken over Rice with White Sauce, Red Onions & Salad

Ingredientai

Chicken:

- 1 skinless chicken breast (about 6 oz)

- 1 tbsp olive oil

- Juice of ½ lemon

- ½ tsp garlic powder

- ½ tsp paprika

- ¼ tsp cumin

- ¼ tsp salt

- ¼ tsp black pepper

Rice:

- ⅓ cup basmati rice

- ⅔ cup chicken broth (or water)

- 1 tsp butter

- ⅛ tsp turmeric

- ¼ tsp cumin

- Pinch of salt

White Sauce:

- ¼ cup mayonnaise

- ¼ cup plain Greek yogurt

- 1 tsp white vinegar

- ½ tsp garlic powder

- Pinch of salt and pepper

Salad:

- Spring salad (mixed greens, cucumber, etc.)

- Raw chopped red onions

1. Marinate the Chicken:

In a bowl, combine the lemon juice, garlic powder, paprika, cumin, salt, and pepper. Add the chicken breast and coat it well. Allow it to marinate for at least 30 minutes.

2. Cook the Rice:

Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

In your rice cooker, add the rinsed rice, chicken broth (or water), butter, turmeric, cumin, and a pinch of salt. Stir gently to combine.

Close the lid and start the rice cooker. It should take about 15 minutes or until the rice is cooked.

3. Cook the Chicken:

While the rice is cooking, heat olive oil in a skillet over medium-high heat.

Add the marinated chicken breast and cook for about 6–7 minutes on each side or until fully cooked. At times, chop up the chicken like they do it at the halal carts.

4. Make the White Sauce:

In a small bowl, whisk together mayonnaise, Greek yogurt, white vinegar, garlic powder, parsley, salt, and pepper until smooth.

5. Assemble onto a plate and enjoy!
