Chicken Pot Pie Soup

Here’s what you need:
4 tbsp unsalted butter
1 yellow onion, diced
2 medium carrots, peeled and diced
2 celery ribs, sliced
3 garlic cloves, minced
3 sprigs thyme, leaves
2 tsp salt
1/2 tsp black pepper
1/3 cup all purpose flour
5 cups chicken broth
3/4 lb yukon gold potatoes, peeled and diced
1 cup frozen peas
1 cup fresh or frozen corn
4 cups shredded chicken
1/2 cup heavy cream or milk
1/4 cup fresh parsley, chopped, plus more for garnish

Heat a large pot over medium heat. Add the butter and let melt slightly. Add the onion, carrot and celery and sauté for 5-7 min until softened. Add garlic and sauté an additional minute more. Stir in flour, thyme, salt and pepper until vegetables are coated.
Add potatoes and chicken broth, bring to a slow boil then reduce to a simmer, cover and simmer for 10-15 minutes until potatoes are just tender.
Stir in the chicken, peas, corn, cream and parsley. Bring to a simmer, uncovered, for 4-5 minutes until peas and corn warmed through and the soup thickened to desired consistency. Taste and season with additional salt and pepper if needed.
Serve topped with fresh parsley and my favorite, homemade biscuits!
