Oatmeal Cake w/ Broiled Coconut Icing

1¼ Cups boiling water. 284gm
1 Cup uncooked rolled oats (old-fashioned oatmeal, not instant)

½ Cup Butter (softened)
1 Cup Granulated Sugar 198gm
1 Cup Brown Sugar (packed) 213gm
1 tsp. Vanilla. 5gm
2 Eggs
1 ½ Cups All-Purpose Flour. 180gm
1 tsp. Baking Powder 4gm
½ tsp. Salt. 1.3gm
1 ½ tsp. Cinnamon
½ tsp. Nutmeg
Frosting
½ Cup butter melted
1 Cup brown sugar (packed) 213gm
6 Tbsp heavy cream (3 ounces). 85gm
1 Cup chopped walnuts (or pecans as you desire). 113gm
1 ½ Cup shredded coconut. 80gm

1 Pour boiling water over oatmeal, cover, and let stand for 20 minutes.
2 Cream together butter and sugar until light and fluffy.
3 Blend in vanilla and eggs.
4 Stir in oatmeal mixture
5 Sift together flour, baking powder, salt, cinnamon, and nutmeg and stir into creamed mixture, blending well.
6 Turn batter into a greased and floured 9" X 13" pan.
7 Bake at 350° for 45 minutes or until inserted toothpick comes out clean.
8 Spoon frosting over warm cake and spread.
FROSTING
1 Mix all ingredients together & spread on warm cake.
2 Place under broiler 4-6 inches until frosting is bubbly (several minutes).
Pastabos
I took the cake out of the oven and prepared the frosting. When the frosting was ready (obviously that only took a few minutes), I frosted the cake. The cake has to be pretty warm for the icing to be spread out, as the frosting is pretty thick with the nuts and coconut.
