Crockpot Broccoli Cheddar Soup

4 cups broccoli florets (fresh or frozen)
1 small yellow onion, diced
½ bag shredded carrots
1 tsp garlic powder
3 cups low-sodium chicken broth (added to crockpot)
1 cup chicken broth mixed with ¼ cup cornstarch (slurry)
1 tsp salt
½ tsp black pepper
½ tsp paprika (optional)
1 cup heavy cream or half-and-half
2 cups shredded sharp cheddar cheese
8 oz cream cheese, cubed

Add broccoli, onion, shredded carrots, garlic powder, 3 cups of broth, salt, pepper, and paprika to crockpot.
In a separate bowl, mix 1 cup chicken broth with ¼ cup cornstarch to make a slurry, then add to crockpot.
Cook on HIGH for 3 hours, until broccoli is tender.
(Optional) Blend with immersion blender for a smoother texture.
Stir in cream cheese until melted.
Add heavy cream and cheddar cheese. Stir until melted and creamy.
Taste and adjust seasoning if needed. Serve hot.
