Salsa Verde Chicken and Rice Skillet

2 cups shredded chicken breast

1/2 diced yellow onion

3 minced garlic cloves

15 ½ @sietefoods salsa verde

2 cups chicken broth

1 cup white rice

1 can black beans

1 can corn

8oz shredded pepper jack cheese

1 tsp chili powder

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cumin

salt and pepper to taste

How to:

Start by adding olive oil to a skillet on medium heat. Ad your onion and garlic and allow to cook for 3-5 minutes.

Add in your chicken, black beans, corn, salsa verde and chicken broth. Mix together before adding your seasonings. Allow this to come to a boil before adding your rice. Cover with a lid and allow to cook for 20 minutes.

Once your rice is completely cooked top with cheese and allow this to melt.

Serve with avocado, Greek yogurt, cilantro and lime!
