Garlic Pulled Beef Pasta

Ingredientai

500g casserole or brisket beef

300g pasta

1 red wine stock pot

1 beef oxo cube

1 onion finely diced

3 tsp minced garlic

2 tsp basil

2 tsp oregano

1 tsp thyme

Pinch salt & pepper

2 tbsp tomato puree

1 tin chopped tomatoes

250g water

100ml single cream

50g grated parmesan

Bunch fresh basil finely chopped

Add a drizzle olive oil to a pan & brown off the beef for a few mins on a high heat (optional step if you are short on time).

To the slow cooker add the beef, onion, garlic, chopped tomatoes, tomato puree, stock pot, oxo cube, water, dried herbs, salt & pepper.

Stir well then cook on low for 6 hours.

Once cooked shred up the beef, add in the cream, parmesan & fresh basil stir well & cook for another 30 mins.

Whilst cooking place the pasta on to boil as per the packet instructions.

Once the pasta is cooked add a ladle of pasta water & the pasta in to the sauce then stir well until all of the pasta is fully coated.

Serve with garlic bread & optional garnish of parmesan & fresh basil.
