Creamy Mongolian Chicken Noodles

1 lb chicken breasts or thighs, sliced thin
2 tablespoons butter
1 tablespoon olive oil
1 small onion, diced
3 garlic cloves, minced
1 teaspoon ground ginger
1/2 teaspoon black pepper
12 oz lo mein noodles, linguine, or spaghetti
Mongolian Cream Sauce:
1/2 cup soy sauce
1/3 cup brown sugar
1 cup chicken broth
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
1 tablespoon cornstarch + 2–3 tablespoons water (slurry)
1/2 cup heavy cream
1 tablespoon sesame oil
Optional Garnishes:
Green onions
Sesame seeds
Red pepper flakes

Cook noodles according to the package directions, drain, and set aside.
In a large skillet, heat butter and olive oil over medium heat. Add sliced chicken, season with pepper and ginger, and cook until browned.
Add onion and cook 2–3 minutes until softened.
Add garlic and cook 1 minute until fragrant.
In a bowl, whisk soy sauce, brown sugar, chicken broth, hoisin, and rice vinegar. Pour into the skillet.
Bring to a simmer and stir in the cornstarch slurry to thicken.
Add heavy cream and sesame oil, stirring until the sauce becomes silky and creamy.
Add cooked noodles and toss until fully coated in the creamy Mongolian sauce.
Garnish with green onions, sesame seeds, or red pepper flakes.
