Creamy Chicken Over Rice Bowl

For the Chicken:

2 tablespoons butter

1 tablespoon olive oil

1 pound boneless, skinless chicken breasts, diced

Salt and pepper, to taste

1 small onion, finely diced

2 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1/4 teaspoon paprika

2 tablespoons chopped fresh parsley (plus extra for garnish)

For the Rice:

1 cup long-grain white rice

2 cups water or chicken broth

Cook the Rice

In a medium saucepan, bring 2 cups of water or chicken broth to a boil.

Stir in the rice and a pinch of salt. Reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender and liquid is absorbed. Fluff with a fork and set aside.

Sauté the Chicken

In a large skillet, melt butter with olive oil over medium heat.

Season diced chicken with salt and pepper. Sauté for 5–7 minutes until browned and cooked through. Remove and set aside.

Make the Cream Sauce

In the same skillet, sauté diced onion and garlic for 2–3 minutes until softened.

Stir in the heavy cream and chicken broth. Simmer for 3–4 minutes until slightly thickened.

Add Parmesan cheese, paprika, and chopped parsley. Stir until creamy and smooth.

Combine and Finish

Return the chicken to the skillet and simmer in the sauce for 2–3 minutes until heated through.

Assemble the Bowl

Scoop a portion of cooked rice into a bowl. Spoon the creamy chicken mixture over the rice.

Garnish with extra fresh parsley and serve warm.
