Shirazi Salad

Salad:⁣

4 Persian cucumbers, finely chopped⁣

3 Roma tomatoes, finely chopped ⁣

½ red onion, chopped⁣

1 green bell pepper, seeded and finely chopped ⁣

1/4 cup cilantro, chopped⁣

3 tb parsley, chopped⁣

1/4 cup fresh mint, chopped⁣

Dressing:⁣

1/3 cup extra virgin olive oil⁣

1/4 cup fresh lime juice (1-2 limes)⁣

2 tsp sumac (optional but highly recommend)⁣

1/2 tsp kosher salt⁣

1/2 tsp black pepper⁣

Chop all of your ingredients finely. Drain as much of the liquid from the tomatoes as possible, so the salad isn’t soggy! Add all of the salad ingredients to a large bowl. Next, make the dressing by whisking together all of the ingredients listed above. Pour over the salad, toss and enjoy!
