Chicken Larb (Laab Gai)

  • chicken drum stick or thigh minced in food processor or 1lbs of ground chicken

  • 4 cloves of garlic

  • 1 tbsp sugar

  • 1 tbsp fish sauce

  • 1 tsp salt

For the dressing

  • 3 limes

  • 1 tbsp palm sugar

  • 5tbsp fish sauce

  • 4 green onions

  • thinly sliced shallot or sweet onion Add

  • 1/2 bunch cilantro

Garnish

  • 2 cups of cooked jasmine rice

  • one cucumber

  • lettuce

  • handful of mint leaves

  • 1/4cup of toasted rice

  • thinly sliced sweet onion

  1. Begin cooking 2 cups of white rice in rice cooker. Mince chicken into small pieces, careful not to make a purée. You can use ground meat, but the flavor won’t be the same.

  2. Sauté minced garlic until fragrant and then add chicken. Cook until most of the water has evaporated.

  3. Add sugar, salt and fish sauce. Mix to incorporate. Remove from heat.

  4. Make the sauce, add fish sauce, sugar and juice of 3 limes. Whisk and then add in roughly chopped cilantro, thinly sliced onion and green onions.

  5. Mix the sauce with the cooked chicken mixture.

  6. In a separate skillet, add 1/4 cup of rice and toast on medium heat until golden brown. Remove from heat and grind using a mortar and pestle or spice grinder. Set aside.

  7. Sprinkle toasted rice on meat right before serving.

  8. Serve chicken on bed of lettuce with cucumber, mint and sliced onion as garnish.
