2 tablespoons fresh lime juice (or lemon)

1 tablespoon honey or agave syrup

2 tablespoons extra virgin olive oil

1 teaspoon white balsamic vinegar (or red wine vinegar)

Pinch of salt

Freshly ground black pepper to taste

Optional: Zest of ยฝ lime for extra zing

Whisk together the lime juice, honey, vinegar, salt, and pepper in a small bowl.

Slowly drizzle in the olive oil while whisking until emulsified.

Taste and adjust sweetness or acidity as needed.

Drizzle over your salad right before serving.

Optional Add-Ins:

A splash of orange juice for added fruitiness

Chopped fresh basil if you want to mix herbs with mint

A few drops of chili oil or crushed red pepper flakes for a sweet-spicy kick
