Coriander pesto chicken

3 garlic doves, crushed Salt and black pepper Zest and juice of 1 lemon A large handful of fresh coriander, chopped 60ml olive oil 1 large chicken, cut into 8 pieces To serve: New potatoes Salad or steamed vegetables

1 Combine all the ingredients, except for the chicken, in a blender and puree until smooth.

2 Use a sharp knife to cut slits through the skin of the chicken. Rub the pesto all over, pressing it into the slits. Cover and refrigerate for at least one hour, preferably overnight.

3 Preheat the oven to 180°C/160°C fan/gas mark 4 and place the chicken in a baking dish. Bake for 45-60 minutes, turning occasionally, until cooked through.

Serve with new potatoes and a salad or steamed vegetables.
