Vegan Chilli Tofu

Ingredients (serves 4)

400g firm tofu, pressed & cubed

2 tbsp cornflour

2 tbsp soy sauce

2 tbsp tomato ketchup

1 tbsp chilli sauce

1 tbsp rice vinegar

2 tbsp sesame oil (or neutral oil)

1 onion, sliced

1 red pepper, chopped

1 green pepper, chopped

2 garlic cloves, minced

1-inch ginger, grated

1 green chilli, sliced

Fresh coriander, to garnish

Toss tofu in cornflour with a pinch of salt. Pan-fry in oil until golden and crisp.

Mix soy sauce, ketchup, chilli sauce, and vinegar into a sauce.

In the same pan, sauté garlic, ginger, onion, and chilli for 2 mins.

Add peppers and cook until slightly charred but still crisp.

Stir in sauce, then add tofu. Toss well until coated and glossy.

Garnish with fresh coriander and serve sizzling hot.

Additional Tip: For extra heat, add dried red chillies while frying aromatics.
