Ilham’s Kabsa ( كبسة الهام

6 onions finely diced or blended

1 whole chicken cut into pieces skinless

2 cinnamon sticks

2 bay leaves

2 lumis

3 cardamom pods

2 tbsps olive oil

2 tbsps tomato puree

1 tbsp Kabsa seasoning

2 tbsps pomegranate molasses

2 tbsps soy sauce

3 blended tomatoes

salt

2 cups of @canarybasmati

6 cups of water

3 heads of garlic

1 chicken stock cube

lime for garnish

chili to taste

start by browning the onion in a drizzle of olive oil. This may take up to 7-10 minutes on high till you get a caramelized onions ( the darker the better go full chocolatey brown)

add the chicken pieces with the aromatics and keep stirring between each addition.

add the Kabsa seasoning. Pomegranate molasses. Tomato paste. Soy sauce and stir everything on high for 2-3 minutes.

pour the blended tomatoes and let it cook for 5 minutes.

add the water. Garlic and stock cube. Cover the pot and let it simmer only for 10 minutes. ( the chicken will continue cooking along with the rice as this recipe is ready in 45-50 minutes)

wash the @canarybasmati rice then add it to the pot. Make sure that the water level is about 2-3 cm above the rice. Even more to get a saucier Kabsa.

let the rice boil for 6-7 minutes uncovered then drop the heat to a simmer. Cover and let it cook for 20 minutes.

once it’s ready there should be some sauce left on the edges and that’s how it should be. Pour it on a serving plate.

garnish with limes have it with powdered hot sauce ( I’ll be making a video of it soon) and enjoy.
