Cabbage Omelette

1 ½ cups cabbage, sliced thin

1 large shallot or 1 small onion sliced thin

3 tablespoons neutral oil

3-4 large eggs

Pinch of salt

½ teaspoon ground black pepper

1 tablespoon soy sauce

2 tablespoon sweet chili sauce

2 tablespoon mayo

1 tbsp furikake or 1 tbsp sesame seeds

Slice the cabbage very thin. Set Aside.

In a medium frying pan or cast-iron skillet over medium-high heat add 2 tbsp of oil and cook the shallots until they soften. Turn the heat on high and the cabbage and cook for 5-6 minutes. Take off heat.

In a bowl, whisk together the eggs and the cabbage mix. Stir until well combined.

Heat 1 tablespoon of oil in small pan on medium heat and add the cabbage and egg mixture making sure to move the egg around the pan with a spatula to ensure even cooking (the top will still have have runny spots, that’s okay). Continue to cook for about 4 mins.

Carefully slide the omelette onto a plate, quickly flip both the plate and pan together, and then slide the omelette back into the pan to cook the other side for 3-4 minutes until golden.

Transfer the omelette to a plate. Spread the sweet chili sauce on top, drizzle the mayo and sprinkle the furikake evenly. Serve and Devour!
