ยผ teaspoon salt

2 tablespoons unsalted butter

2 teaspoons vanilla extract (imitation vanilla will get closer to the classic boxed flavor)

1. Mix the dry ingredients: In a medium saucepan (off heat), whisk together the sugar, cornstarch, and salt.

2. Add milk slowly: Gradually whisk in the milk until everything is smoothโ€”no lumps.

3. Cook the pudding: Place over medium heat and cook, whisking constantly, until the pudding thickens and starts to bubble gentlyโ€”about 5โ€“8 minutes.

4. Finish: Remove from heat. Stir in the butter and vanilla until smooth and glossy.

5. Cool: Pour into small containers or a bowl. Press plastic wrap directly on the surface to prevent skin forming. Let cool to room temp, then refrigerate at least 1โ€“2 hours.
