Stock:

Husks and silk and cobs (w/ kernels cut off) from 24 ears corn, 2 yellow onions coarsely chopped, 1/2 c whole garlic cloves, 1 bunch parsley and 1/2 bunch thyme for bouquet garni; 1 jalapeño cut into 4 pieces (with seeds), 2 tsp whole peppercorns, 2 handfuls kosher salt

Fill huge pot either ingredients and water; will take 1 hour for it to boil; keep checking it

Leave lid on for part of the time

Get 2 soup pots hot with olive oil to expedite cooking

Add onion, add cumin, and toasted coriander

Add Gypsy papers and celery

Add peppercorns and bouquet garni of 1 bunch thyme

Let simmer for a while, then add stock

Simmer and keep tasting and checking for salt

Soup will be pureed; take out bouquet garni

Garnish with tomatillo salsa and garlic oil
