Mussels In White Wine

재료

  • 4.5lbs Mussels

  • 4T Butter

  • 4 Large shallots finely chopped

  • 1 1/4C White wine

  • 2-3T Parsley, chopped

  • Salt and pepper to taste

Bouquet Garni

  • 1 Bay leaves

  • 3 Springs of Thyme

  • 3 Springs of Parsley

Option

  • 4 Garlic cloves, minced

  • 2 Roma tomato, chopped

  • 10 Basil leaves, chopped

  • Clean mussels, remove beards, and discard any broken/opened one. Soak mussels in clean cold water & change water often for 1 hr.

  • In a pan, combine wine, shallots, bouquet garni, bring to a boil over medium heat & cook for 2 minutes.

  • Add mussels and cook covered for 5 minutes or until all mussels open. Discard any mussels that do not open. Serve w/ crusty French bread or mix w/ pasta.

Optional

  • Heat 1T olive over in a pan over medium heat, add garlic, stir until lightly colored.

  • Add tomato & half of basil, cook for 1 minute.

  • Add white wine & cook for 2 minutes.

  • Add mussels and cook covered for 5 minutes or until all mussels open.

노트

  • Omit Bouquet garni if cooking w/ option choice.

  • Sauvignon Blanc or Pinot Grigio are usually my choice, but Chardonnay will work too & easier to find.

  • 1 medium size onion will work too if not shallots.
