재료

1 red onion

1 red pepper

1 yellow pepper

2 courgettes

1 box mushrooms

1 pack baby tomatoes

Drizzle olive oil & balsamic vinegar

Salt & pepper, to taste

1 tsp dried oregano

1 tsp paprika

1 cup stock

2–3 tbsp tomato puree

1 tsp Worcestershire sauce

2 tbsp crème fraîche

Pasta of your choice

Parmesan shavings & fresh basil, to serve

Chop all veg. Toss with oil, balsamic, salt, pepper, oregano & paprika.

Bake 30 mins at 180°C.

Add stock, tomato puree & Worcestershire. Bake 10 mins more.

Optional: blend or thicken with cornflour (mix 1 tbsp with 1 tbsp cold water before adding)

Stir in crème fraîche, add pasta.

Top with Parmesan & basil.
