Greek Salmon Quinoa Bowl

• 1 lb salmon filet

• ½ tsp salt

• ⅛ black pepper

• 8 oz green beans, trimmed

and cut into 1-inch pieces

• 1% cups of water

• % cup quinoa

• 3 tbsp lemon juice

• 2 tbsp olive oil

• 2 tsp chopped fresh or ½ tsp dried oregano

• 1 clove garlic minced

• 1 cup seeded and chopped tomato

• ¼ cup crumbled feta cheese

• ¼ cup pitted Kalamata Olives, sliced or halved

  1. Preheat oven to 400°F. line baking sheet with foil. Place salmon on prepared baking sheet. Sprinkle with ¼ tsp of the salt and ⅛ tsp of pepper. Bake for 20 to 25 minutes or until salmon flakes easily.

  2. Place beans in a steamer basket and steam for 5 min or until crisp tender. Rinse beans under cold water and drain.

  3. In same saucepan combine 1¾ C water, quinoa and ⅛ tsp salt. Bring to boil, reduce heat and simmer for 15 to 20.

  4. For dressing, whisk together lemon juice, oil oregano, garlic and remaining salt and pepper.

  5. Divide quinoa, salmon and beans among bowls and then add rest of the ingredients.
