Creamy Chickpea Curry

재료

1 onion

2 garlic cloves

Thumb of ginger

1 tin of chickpeas

1 tin of coconut milk

1 tin of chopped tomatoes

Handful of spinach

Spices: 1 tbsp cumin, 1 tbsp paprika, 1 tbsp turmeric, pinch of chilli powder, salt and pepper

chop and fry onion for 5 minutes then add garlic, ginger and the spices and fry for another 3 minutes

add the chopped tomatoes and coconut milk and simmer for 5 minutes

add the chickpeas and the spinach

simmer on a low light till the sauce has slightly thickened, season with salt and pepper and enjoy!
