Aloo Hari Phool Gobi (spiced Roasted Potatoes & Broccoli

2 medium potatoes, peeled and diced
1 small head of broccoli, cut into florets
Broccoli stalks, peeled and sliced (optional)
2 carrots, peeled and sliced
3 tbs olive oil
1 tsp turmeric
1 1/2tsp ground coriander
1 tsp ground cumin
½ tsp chilli powder (adjust to taste)
Salt, to taste
Optional (for serving):
Juice of ½ lemon
½ teaspoon garam masala
Handful of chopped fresh coriander

1.Preheat oven to 200°C (400°F) and line a baking tray with foil or greaseproof paper.
2.In a large mixing bowl, combine the diced potatoes, broccoli florets, broccoli stalks, and carrots.
3.Add spices turmeric, coriander, cumin, chilli powder, and salt.
4.Drizzle olive oil over vegetables & spices mix well to coat everything evenly.
5.Spread the veggies out in a single layer on the tray.
6.Roast for 20–25 minutes, or until the potatoes are cooked and everything is lightly golden.

Once out of the oven, add a squeeze of lemon juice, sprinkle over garam masala, and finish with fresh coriander.
This dish is perfect as a colourful side or a light main. Enjoy with your favourite protein, great in a wrap too
