Clarified Siesta (Serves 4) ๐Ÿ‹๐ŸŸฉ:

10 oz Tequila Blanco

5 oz Fresh Lime Juice

4 oz Fresh Grapefruit Juice

3 oz Campari

4 oz Simple Syrup

7 oz Whole Milk (for clarification)

Mix tequila, lime juice, grapefruit juice, Campari, and simple syrup, then slowly pour into the milk. Refrigerate for at least 3 hours or overnight, then strain through a coffee filter, cheesecloth, or paper towels over a fine mesh strainer.

Serve over ice and float 1 oz of the infused tequila using the back of a spoon.

Hibiscus-Infused Tequila (Floater) ๐ŸŒบ:

1 cup Tequila Blanco

ยฝ cup Dried Hibiscus Flowers

Combine in a sealed container, let sit for 3 hours, then strain.

To make other clarified cocktails, a good rule of thumb is using about 25% milk to total cocktail volume (a 1:4 milk-to-cocktail ratio).

To store, transfer to a clean, airtight container and refrigerate.

Itโ€™s recommended to pour the cocktail into the milk, rather than the other way around, so the milk curdles gradually and not instantly.

You can only milk-wash cocktails with citric acid, like lemon or lime juice (ex. margarita, whiskey sour, or daiquiri).
