Sweet Potato, Quinoa & Butter Bean Bowl

1 medium sweet potato, peeled and diced small
15 ml olive oil (for roasting)
Salt and pepper, to taste
5 g garlic powder
5 g onion powder
5 g smoked paprika
45 g quinoa
30 g rocket
100 g grilled bell pepper, chopped
Juice of ½ lemon
10 ml olive oil (for rocket)
100 g hummus
400 g butter beans, drained and rinsed
30 g pomegranate seeds

Preheat oven to 200°C
Place diced sweet potato and butter beans on a lined baking tray
Add garlic powder, onion powder, smoked paprika, salt and pepper
Drizzle with 15 ml olive oil and toss to coat
Roast for 30–35 minutes
Rinse quinoa and place in a small pot with 120 ml water
Bring to a boil, then reduce heat to low and cover
Cook until water is absorbed and quinoa is fluffy
In a bowl, combine rocket, lemon juice, a pinch of salt and 10 ml olive oil
Toss to coat and soften the leaves
To serve, spread hummus on the bottom of a bowl
Top with quinoa, rocket, roasted sweet potato and beans, grilled bell pepper and pomegranate seeds
