CREAMY LEMON-GARLIC CHICKEN & GNOCCHI
12-16 oz chicken breasts, cut in half lengthwise to make cutlets โข 3/4tsp garlic powder โข 1 tsp lemon pepper seasoning 2 tbsp olive oil or butter โข 3 cloves garlic, minced โข ยฝ cup chicken or vegetable broth โข
1 tbsp lemon juice โข 1 cup heavy cream or plant-based cream โข 1 lb. potato gnocchi โข 1/3 cup parmesan cheese, grated โข 3 cups fresh spinach โข

season each of side of the thin chicken cutlets with garlic powder and lemon pepper
add oil and butter to skillet over medium-high heat and sear chicken for 5 min per side, until golden and cooked through. transfer to a plate.
stir in broth and lemon juice.
add cream and gnocchi. Stir and make sure the gnocchi is covered in sauce. let it simmer uncovered, for 5-7 minutes, stirring occasionally until sauce is thickened.
remove pan from heat and add parmesan and spinach. Toss until spinach is wilted. place chicken cutlets back into skillet
