Apple Cranberry Chicken Salad

1 cooked chicken breast (about 8 oz)

1 small apple

1/4 of a red onion

1 green onion

2 tbsp chopped pecans

2 tbsp reduced sugar dried cranberries

1/4 cup plain greek yogurt

1/2 tbsp dijon mustard

1 tsp lemon juice

salt and pepper to taste

Dice the chicken breast and apple into small cubes. Finely dice the red onion and green onion.

Add the chicken, apple, red onion, green onion, pecans, cranberries, greek yogurt, dijon mustard and lemon juice to a bowl or container.

Mix well so that it is evenly combined, then season to taste with salt and pepper.

I love eating this in a sandwich, salad, or wrap, but it's also delicious on its own! Store it in the fridge in an airtight container for 3-4 days.
