Ultimate Bean Chilli

Recipe:

Ingredients (Serves 4)

1 onion, finely diced

4 garlic cloves, grated

2 tbsp olive oil

1 tbsp tomato purée

1 tbsp smoked paprika

2 tsp ground cumin

2 tsp oregano

1 × 400g tin black beans

1 × 400g tin kidney beans

1 × 400g tin white beans

1 × 400g tin chopped tomatoes

750ml vegetable stock

1 avocado, sliced

Juice of ½ lime

Salt + pepper

How to Make It

Cook the base — Heat oil in a large pan, add onion + cook 5 mins till soft. Stir in garlic, paprika, cumin, oregano + tomato purée, cook 1–2 mins.

Simmer the chilli — Add all the beans, tomatoes + stock. Bring to a boil, then simmer 25–30 mins till thick and rich.

Serve it up — Spoon into bowls, top with avocado + a squeeze of lime.
