2 oz Empress 1908 Indigo Gin
ยฝ oz Passion Fruit Liqueur
ยพ oz Simple Syrup
ยฝ oz Fresh Lemon Juice
ยฝ oz Heavy Cream
1 Egg White
Soda Water, to top
Edible Flowers, to garnish
METHOD: In a shaker, add Empress 1908 Indigo Gin, passion fruit liqueur, simple syrup, lemon juice, an egg white, and heavy cream (in that order), and shake with ice for 60 seconds. Strain out the ice and shake again without ice for another 60 seconds. Strain into a chilled glass, pouring in soda water simultaneously until the glass is filled to the brim. Let set in the freezer for another 60 seconds. Using a bar spoon, poke a hole into the centre of your cocktail. Pour soda water into the hole and watch as your foam rises. Garnish with edible flowers and enjoy!
