Creamy Pesto Gnocchi with Sausage and Veggie

1 zucchini

1 yellow bell pepper

12oz chicken sausage

olive oil

garlic

italian seasoning

salt & pepper

1/2 cup pesto

1 cup chicken broth

1/2 cup heavy whipping cream

16oz potato gnocchi

grated parmesan

heat olive oil in a large sauté pan

cook chicken sausage until outsides are browned

add in onion, zucchini, bell pepper, garlic, and seasonings

sauté until veggies are tender

stir in pesto, chicken broth, and heavy cream until bubbly

mix in gnocchi, cover, and simmer about 15 minutes until gnocchi is cooked and sauce is thickened

top with grated parmesan
