INGREDIENTS:
1 Cup Cashew Butter (CSE use code aliciae)
1 Cup Pitted Dates, soaked in warm water for 10 minutes
1/2 Tsp Vanilla Extract
1/4 Tsp Sea Salt
1 Cup Dark Chocolate Chips
1 Tbsp Coconut Oil
Flake salt for topping

BLEND BASE: DRAIN THE SOAKED DATES. IN A FOOD PROCESSOR, BLEND THE CASHEW BUTTER, DATES, VANILLA EXTRACT, AND SEA SALT UNTIL SMOOTH. FORM BARS: LINE AN 8X8 INCH BAKING DISH WITH PARCHMENT PAPER. PRESS THE CASHEW- DATE MIXTURE INTO AN EVEN LAYER.
FREEZE FOR 30 MINUTES PREPARE CHOCOLATE: IN A MICROWAVE-SAFE BOWL, MELT THE DARK CHOCOLATE CHIPS AND COCONUT OIL IN 30- SECUND INTERVALS, STIRRING UNTIL SMOOTH. DIF BARS: REMOVE THE CASHEW-DATE LAYER FROM THE FREEZER AND CUT IT INTO BARS. DIP EACH BAR INTO THE MELTED CHOCOLATE, LETTING THE EXCESS DRIP OFF. ADD SALT: PLACE THE BARS ON A PARCHMENT- LINED BAKING SHEET AND SPRINKLE WITH FLAKE SALT. REFRIGERATE UNTIL THE CHOCOLATE IS SET.
