Vitaminchik Salad

재료

1 endive, diced

2 persian cucumbers, diced

10 cherry tomatoes, halved

1 cob of corn, stove charred and de-cobbed*

1 rib of celery, diced

½ orange bell pepper, diced

1 scallion, thinly sliced

Small handful of dill, chopped

2 tablespoons extra virgin olive oil

Juice of ½ lemon

Freshly cracked black pepper

Grey sea salt to taste

Note #1: When dicing all of your vegetables, try to be consistent with the size of the dice. It makes it more fun and special to eat! [trust me]

Note #2: For a quick charred corn, place a raw cob on your gas range and turn to high heat. Using metal tongs rotate the cob once each side is blistered to your liking. (You may hear a popping sound from the corn. This means it is ready to turn! Once the cob is charred to your liking, remove from heat and using a knife, slice off the kernels.)

In a medium sized bowl, combine your endive, cucumbers, tomatoes, corn, celery, bell pepper, scallion, and dill. Season with black pepper, grey salt, lemon juice, and extra virgin olive oil.
