Crockpot Meals
Bbq Chicken Mashed Potato Bowls

3 boneless/skinless chicken breast
1 cup bbq sauce
1/4 cup apple cider vinegar
2 tbsp honey mustard or 1 tbsp honey 1 tbsp dijon
Seasonings for the chicken (I just eyeball) salt, garlic powder, cajun seasoning, smoked paprika
Green onions
1 cup of shredded low fat cheddar (a few tbsp per serving)
5 russet or Yukon gold potatoes peeled
1/2 -2/3 cup skim milk until desired consistency
2-3 tbsp of butter

In the crockpot add - chicken, seasonings, apple cider, bbq sauce, honey and mustard. Cook on low for 6-8 hrs or high 3-5.
Once done shred chicken in the crock pot and let soak up all of the juices
Meanwhile peel, chop your potatoes for the mash. Drain your cooked potatoes and mash with butter, milk, salt and pepper.
Serve in a bowl with mashed potatoes first, sprinkle the cheese and top with the chicken and a little of the bbq juice. Garnish with green onion
Optional: serve with a side of steamed broccoli, green beans, or peas!
