Roasted Sweet Potato Black Bean Quinoa Salad! Nutrient-dense

This easy salad is high in protein, fiber, and flavor. Perfect for meal prep!

Pro Tip: Add the avocado just before serving so it doesn’t turn brown.

YOU’LL NEED

1 ¼ lbs sweet potatoes, cubed

1 large red onion, cubed

4 T extra virgin olive oil, divided

2 tsp chili powder

1 tsp smoked paprika

½ tsp kosher salt

1 ½ c cooked quinoa (from ½ c dry)

Zest & juice of 2 lime

2 tsp maple syrup

1 clove garlic, minced

1 can reduced sodium black beans, rinsed

1 large bell pepper, diced

¾ c chopped cilantro
