Grandma's Currant Pie with Meringue Topping

Currant Pie

  • 1 cup ripe currants

  • 2 egg yolks

  • 1 cup sugar

  • 1/4 tsp salt

  • 1/4 cup flour

  • 1 tbsp water

Meringue

  • 2 egg whites

  • 4 tbsp sugar

  • 1/2 tsp vanilla or 1/4 tsp lemon extract

  • pinch of salt

Currant Pie

  • Preheat oven to 350F.

  • Wash currants. Beat egg yolks slightly. Add sugar, salt, flour, water, and currants. Line pie pan with pastry and pour in filling.

  • Bake for 35 minutes until filling is firm. Cover with meringue.

Meringue

  • Beat egg whites until stiff, add sugar gradually and continue beating until the mixture is fine grained and well shaped. Add salt, vanilla, spoon on top of pie and bake in oven at 325F. Pie is done one the meringue has turned a golden brown.
