1 tbsp olive oil 2 chicken fillets, chopped 1 large white onion, finely chopped 1 red pepper, thinly sliced 2 garlic doves, crushed 75g chorizo, sliced 1 tbsp Cajun spice 250g long grain rice 1 x 400g tin of plum tomatoes 350ml chicken stock

1 Heat the oil in a large frying pan with a lid and cook the chicken for 5-8 minutes until browned. Remove and set aside.

2 Add the onion and cook for 4-5 minutes until softened. Add the pepper, garlic, chorizo and Cajun spice and cook for five minutes.

3 Stir in the rice, tomatoes, chicken stock and chicken until combined. Cover and simmer for 20-25 minutes until the chicken is cooked through and the rice is tender.
