Cauliflower In Clay Pot

  • 1 Cauliflower (small), cut up

  • 2 Green onion, chopped (optional)

  • 2T Oil

  • 1/4C Water

  • Szechwan peppercorn powder to taste (optional)

  • Salt or smoked salt to taste

  • In a medium size pan, heat up oil, green onion & 1/4t salt over medium heat, until the green onion slightly browned.

  • Add cauliflower, give a quick stir, and add water. Cover & cook until steamed. Cauliflower should be somewhat translucent.

  • Turn the heat to medium high, cook until water evaporates, add smoked salt, Szechwan peppercorn powder, and cook until cauliflower slightly browned on edge.

노트

  • I like to lightly season my oil before cooking to ensure veg taken on some flavor 1st & draw out moisture.

  • Hickory smoked salt works the best but whatever you have works.

  • I like to keep it vegetarian, but you can add pork belly or bacon/bacon bits to it if you like. If bacon is used, omit salt/smoke salt.

  • You can add broccoli, carrots, bell pepper to it if you like. If sauté all quick cooking vegetables 1st, remove from the pot, then cook the cauliflower. Once the water has evaporated from cauliflower, return all vegetables back to pan & finish as usual.
