Chicken Salad

  • 42.5oz wet weight canned chicken breast

  • 3 celery stocks (finely chopped)

  • .5lb Red onion (finely chopped) (maybe less)

  • 5oz Dried cranberries (could use more)

  • Raisins (2oz?)

  • Golden raisins (about 5oz)

  • 12oz Red grapes (halved)

  • 1 Apple (diced and covered in lemon juice to prevent browning)

  • 1-2 tbsp sour cream

  • 6-8tbsp Mayo

  • 3-4 tbsp honey!

  • 1 Lemon

  • Salt pepper

  • Burrito sized tortilla or wraps (Carb counter for half calories)

Next time:

  • Maybe try light mayo? Or mayo + Greek yogurt

  • Lots of lettuce or kale to fill wraps

  • Dad used slivered almonds

  • Maybe add greens next time?
