These high-protein cheesecake jars are creamy, tangy, and layered with a golden granola base + a little zest on top (to make them feel extra fancy).

I love making a batch at the start of the week — they take minutes to prep, hold up beautifully in the fridge, and are perfect for breakfast or dessert.

Base:

1 cup granola (crushed) @purely_elizabeth

Filling:

1 ½ cups cottage cheese @goodculture (non-negotiable)

1/2 cup plain greek yogurt @chobani

1 tsp vanilla bean paste @nielsenmassey

2 tbsp key lime juice

1/4 cup maple syrup

Zest from 2 limes

Topping:

1/2 cup heavy whipping cream (whipped in a stand mixer) + vanilla bean paste

Add granola to a blender and blend until crushed and you have a fine powder. In a food processor add in filling ingredients and process for 12-15 seconds. Or until smooth and creamy. Careful not to over process or you’ll end up with a watery texture. Layer in the jars, top with whipped cream if you’re feeling up for it and enjoy!
