MEDITERRANEAN VEG WITH PARMESAN & BLACK PEPPER

1 courgette, chopped into discs
2 red onions, sliced handful of cherry tomatoes
1 red pepper, sliced
1 aubergine, sliced
1 yellow pepper, sliced1 tsp dried oregano
1 tsp dried parsley
1 tsp black pepper pinch of salt
1 tbsp oil
70g Parmesan, grated

1 Add all the ingredients to your air fryer drawer except the Parmesan.
2 Air-fry at 180°C for 10-12 minutes - if you prefer your vegetables charred, you may choose to cook these for longer.
3 For the last 2 minutes of the cooking time, sprinkle the Parmesan cheese over the veg and heat it until melted and browned.
