30g of protein, one pan, and a dinner that genuinely makes you feel good.

Golden courgettes, butter beans and lemon melt down into a creamy, high-fibre base that keeps you full and fuels recovery. A hit of nooch gives that Nerano-style cheesy depth, and the chilli pangrattato on top brings the crunch.

It’s quick, nourishing, and one of those meals you make once and immediately add to your weekly rotation.

Ingredients (Serves 2)

For the beans:

2 tbsp olive oil

2 courgettes

2 garlic cloves

1 tsp cracked black pepper

1 x 570g jar butter beans

100ml veg stock

2 tbsp nutritional yeast

1 lemon

Small bunch chives (to serve)

For the pangrattato:

2 tbsp olive oil

2 tsp chilli flakes

100g panko breadcrumbs

1 tbsp nutritional yeast

Salt & pepper

How to Make It

1️⃣ Sauce – Slice courgettes into thick rounds. Fry in olive oil 7–8 mins until deep golden, flip, add garlic + pepper, mash lightly. Stir in beans, stock, nooch + juice of ½ lemon.

2️⃣ Pangrattato – Mix oil, chilli flakes, breadcrumbs, nooch, salt + pepper.

3️⃣ Grill – Scatter mix over beans and grill on high until golden and crisp.

4️⃣ Serve – Finish with lemon zest + chives. Eat hot, straight from the pan.
