1 cup plain Greek yogurt
2 large eggs
1/2 cup melted coconut oil
1 tsp vanilla bean powder (alcohol-free)
1 tbsp lemon zest
1 ½ cups fresh blueberries

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
