Sticky Gochujang Glazed Chicken and Bacon Burgers

GLAZE
3 tablespoons gochujang
1 tablespoon each brown sugar, rice wine vinegar and tamari
2 teaspoons finely grated fresh ginger
1 teaspoon sesame oil
CHICKEN
400 grams boneless, skin-off chicken thighs
sea salt and ground pepper
1 cup plain flour
2 tablespoons vegetable oil
TO ASSEMBLE
4 burger buns, halved and cut sides buttered
8 slices cheese
2 cups shredded iceberg lettuce
2 large tomatoes, sliced
8 slices streaky bacon, cooked
small pinch of sesame seeds
Spicy Mayo
sliced gherkins

Glaze: Mix all ingredients in a bowl.
Chicken: Cut each thigh in half. Season with salt and pepper, coat lightly in flour. Heat oil in a pan, cook chicken 3–4 mins per side until done. Reduce heat, drain excess fat, add glaze and toss to coat for about 1 min (don’t let it burn).
Assemble: Toast buns, melting cheese on the bottoms. Layer lettuce, chicken, and bacon (brush bacon with extra glaze if you like). Spread spicy mayo on top buns and sandwich together. Serve with sliced gherkins.
