The Perfect Mojito

MOJITO

Juice a lime, set aside but retain the husk

In your glass, muddle:

15 mint leaves

quarter-husk of lime

3/4 oz (22ml) rich syrup (2:1 sugar:water)

Then add:

1 ½ oz (45ml) white rum

½ oz (15ml) overproof pot still rum

¾ oz (22ml) fresh lime juice

3 drops saline

1 oz (30ml) club soda

Fill with crushed ice, swirl to combine.

Mint bush for garnish.

FUN FACTOID: What do the mojito and I have in common? Legends have it we are both descendants of Sir Francis Drake. (Not even kidding…)
