Garlic Butter Cod Strips with Sweet Chili Lime Sauce

Cod fillets, cut into strips (220g)

Butter (2 tbsp)

Olive oil (1 tbsp)

Garlic, minced (3 cloves)

Sweet chili sauce (3 tbsp)

Fresh lime juice (1½ tbsp)

Lime zest (½ tsp)

Chili flakes (½ tsp, optional)

Fresh parsley or cilantro, chopped (1 tbsp)

Salt (to taste)

Black pepper (to taste)

Season cod strips with salt and black pepper

Heat olive oil and butter in a pan over medium-high heat - add cod and sear until golden on all sides

Add garlic and sauté briefly until fragrant

Stir in sweet chili sauce, lime juice, zest, and chili flakes - simmer gently

Spoon sauce over cod until glossy and coated

Garnish with fresh herbs and serve immediately
