Chocolate Orange Hot Cross Bun Bread and Butter Pudding

6 hot cross buns

Jar of marmalade

100g dark chocolate, chopped

200ml whole milk

150ml double cream

2 eggs

50g sugar

1 tsp vanilla extract

Heat the oven to 180c. Slice the hot cross buns in half and spread each half with marmalade. Sprinkle with half of the chocolate and then sandwich them together. Arrange in a baking dish, stacking them and layering. Our dish was 22cm wide.

Add the milk & cream to a pan and heat gently until steaming. Meanwhile, whisk the egg and sugar for 1 minute until really smooth and almost foamy. Once the cream & milk is hot, stream gently into the eggs and sugar, whisking constantly. Keep whisking until smooth. Add vanilla and salt, and mix.

Pour the custard over the hot cross buns. Let sit for 5-10 minutes and then place in the oven for 25 minutes. At 25 minutes, sprinkle over the remaining chopped chocolate. Place back in the oven for a further 5 minute until puffed and golden. It will sink once out the oven a bit but don’t worry, it’s normal. Serve with a drizzle of double cream and enjoy!
