Crispy Breakfast Wrap

4 large eggs

1/2 cup shredded cheddar cheese

3/4 cup shredded Monterey Jack cheese

Freshly ground black pepper

2 large flour tortillas

1 avocado, sliced or mashed

1 cup smashed potato chips

1/2 cup sour cream

2 tbsp hot sauce

1 Tbsp. butter or vegetable oil

Salt and pepper to taste

In a medium pan, add oil and season and scramble the eggs to your desired doneness.

Lay the large tortilla flat. Layer the eggs, shredded cheese, avocado slices, and potato chips. Season with salt and pepper. Carefully fold the edges of the large tortilla towards the center, pleating as you go, to create a hexagon shape.

Place the crunchwrap seam-side down in a hot skillet over medium heat.

Make the dipping sauce by combining the sour cream and hot sauce. Set aside.

Cook for 3-4 minutes per side until golden brown and crisp, pressing down gently with a spatula to seal. Take off heat, serve with spicy sour cream and Devour!
