  • 3 lbs boneless skinless chicken tenderloins

  • 1 tsp baking soda

  • 2 tbsp chili oil

  • 2 tbsp garlic powder

  • 1/2 tbsp five spice powder

  • 10 baby bok choy

  • 1 large onion

  • 4 green onion

  • 1 tbsp ginger paste

  • 1 lotus root

  • 3 handfuls of shiitake mushrooms

Sauce:

  • 4 tbsp hoisin sauce

  • 2 tbsp shaoxing wine

  • 1 cup water

  • 1 tbsp soy sauce

  • 1 tbsp honey

  • 3 tbsp cornstarch

  1. Slice chicken tenderloins thin and mix chopped chicken with baking soda, chili oil, five spice, garlic powder in a bowl and marinate for 30 minutes.

  2. Mix sauce ingredients & set aside.

  3. Prep veggies, stir fry aromatics (ginger, garlic, whites of green onion) and then add diced onion, bok choy, then lotus root and lastly mushrooms.

  4. Remove veggies from pan and stir fry chicken on med-high heat, but 80% cooked.

  5. Add veggies again, pour sauce and turn down heat to medium and stir constantly. Turn down to low.
