J. Kenji's Better "Big Mac"

-1 Onion, finely minced
-1 1/2 Tbsp Mayo
-1 1/2 tsp Sweet Pickle Relish
-1 tsp Mustard
-1/4 tsp Marmite
-1/4 tsp Turmeric
-1/4 tsp Paprika
-1 tsp Sugar
-A pinch of Salt
-Sesame Seed Burger Buns
-Iceberg Lettuce, finely sliced
-16 oz. 80/20 Ground Beef Chuck
-Salt, to taste
-MSG, to taste
-Pepper, to taste
-Sliced Cheese of choice

Start by microwaving the minced onion on low heat for 10 minutes to "dehydrate" onions.
Make the sauce by mixing mayo, relish, mustard, marmite, turmeric, paprika sugar and salt in a bowl and mix together.
Prepare the middle bun by cutting a thin amount of the bottom off to flatten it.
Season mince with salt, MSG and pepper on both sides. Place on a heated pan or hotplate, cover top of patties with parchment paper and use press or spatula to squash down patties. Toast buns in toaster or on pan while patties cook. After 2-3 minutes, flip patties. After flipping, place cheese over patties and let cook on other side for 30-60 seconds.
Arrange burger with sauce, lettuce, patties and any further desired toppings.
