Cheesy Bbq Chicken Pasta

10.58 oz pasta (uncooked weight)

2 chicken breasts, diced

1 tbs smoked paprika

1/2 tbs oregano

1/2 tbs garlic granules

1 onion, finely diced

2 peppers, finely diced

2 tsp garlic purรฉe (or 2 cloves)

1 tbs tomato purรฉe

4 tbs bbq sauce

300 ml chicken stock- I used @knorruk

120 g cheese- I used a mix of cheddar and mozzarella.

Garnish with bbq sauce, chilli flakes and parsley.

๋ฐฉํ–ฅ

  1. Pop your pasta onto boil with plenty of salt.

  2. Meanwhile fry off the chicken with the seasonings until browned,

  3. then add in the onions and peppers and cook until soft. Once soft add in the garlic and cook for 30 seconds.

  4. Then add in the tomato purรฉe and bbq sauce and cook for another minute or so.

  5. Add in the chicken stock and cook until itโ€™s reduced to form a thick sauce. add in the cooked pasta and a little pasta water.

  6. Sprinkle with cheese and pop a lid on or put under the grill until golden and bubbling. Garnish. Serve and enjoy.
